Anyone ever done this?

Cut off an infected tree at the trunk and graft with a resistant variety?

........ or just cut the some beach down

Bill, I haven't topworked an infected tree, but I see no reason that it wouldn't be okay to do if you cut it off quite a bit below the infected part.
 
I did one couple of weeks ago so not much help. The buds are swelling on the scion. 3 different pears. Also did a callery pear thanks to native's advice.
